Lemon & Herb Drumsticks

For a healthy option remove skin from drumsticks, shake bottle thoroughly from side to side and pour desired amount on drumsticks and coat.  Leave to marinade in the refrigerator for 30 minutes.

Place the drumsticks under a hot grill around 10cm from the heat, grill, turning frequently, for 20 minutes until cooked through, serve hot or cold.

This recipe can be used with the Portuguese Inspired Hot Marinade, Orange & Honey Marinade and Chermoulla.

  Halloumi & Vegetable Kebabs

Cut a small baguette into into 8 thick slices and cut each slice in half.  Cut the halloumi into 16 cubes and cut peppers into 8 pieces.

Oil the skewers and thread with bread, halloumi, peppers and cherry tomatoes.  Place in a shallow dish and marinade.

Cook the kebabs under a hot grill, turning once, for approximately 3-4 minutes until cheese is lightly browned.  As an alternative use tofu.


Slow Roast Leg of Lamb

Preheat oven 150oC , 275-300oF, Gas Mark 1-2.  Make several cuts all over the leg, shake bottle thoroughly from side to side and rub the marinade into the cuts and around the surface of the leg. 

Place lamb upside in a large baking dish, cover tightly with foil; bake in the oven for 2 hours.  Turn lamb over, baste all over with juices cover dish; bake for 30 minutes.  Add potato wedges to the dish; bake covered, for 1 3/4 hours.  Remove foil; bake uncovered, about 15 minutes or until browned.  Stand lamb and potato covered 10 minutes before serving.
